New York Chopped Cheese Sandwich
This New York chopped cheese sandwich is my take on the bodega legend, and it might be the best 25 minutes you spend in the kitchen all week. A chopped cheese is seasoned ground beef seared hard on a flat top, chopped up with onions and melty American cheese, then piled into a toasted hero with lettuce, tomato and ketchup. This chopped cheese recipe is simple, a little messy and completely addictive.
This one started as Sandwich Sunday Ep. 33, and I know New Yorkers take their bodega sandwiches very seriously, so I kept it classic. If you love a good sandwich night, try my Caramelized Onion Grilled Cheese or Homemade Reuben Sandwich next.

Why You’ll Love This Chopped Cheese
- Ready in 25 minutes with one skillet and a handful of pantry seasonings.
- Big bodega flavor from adobo and sazón, the seasonings that make a chopped cheese taste like the real deal.
- So much cheese. The American cheese melts right into the beef so every bite is gooey.
- Totally customizable with hot sauce, jalapeños or your favorite toppings.
Ingredients for a New York Chopped Cheese
You only need a short list for this chopped cheese sandwich. Full amounts are in the recipe card below.
The Beef
Regular ground beef works best here. A little fat gives you a better crust and keeps the filling juicy. Yellow onion gets chopped right into the meat as it cooks.
The Seasoning
Adobo and sazón are the secret to that classic bodega flavor, plus a little black pepper. Look for them in the Latin aisle of most grocery stores.
The Cheese and Rolls
White American cheese melts the smoothest, so it is the traditional pick. Use soft hero or Italian rolls that can soak up all the juices, and a little mayo for toasting.
The Toppings
Shredded iceberg lettuce, sliced tomato and a swipe of ketchup keep it authentic.
Swap note: For a lighter chopped cheese, use 90/10 lean ground beef or ground turkey and a whole wheat roll. For a vegetarian version, plant-based ground meat and dairy-free cheese slices work well.
How to Make a Chopped Cheese Sandwich
Step 1: Heat the skillet
Preheat a cast-iron skillet over medium-high heat for about 5 minutes. A really hot pan is what gives the beef that crispy, browned crust.
Step 2: Sear the beef
Press the ground beef into a thin, even layer and season with adobo, sazón and black pepper. Let it sear without touching it for 2 to 3 minutes.
Step 3: Chop it up
Flip the beef, add the diced onion and use two metal spatulas to chop everything together. Cook 3 to 4 more minutes, until the beef is cooked through and finely chopped.
Step 4: Melt the cheese
Divide the beef into two roll-length portions. Top each with 2 to 3 slices of American cheese, cover for about 30 seconds to melt, then chop again so the cheese runs through the meat.
Step 5: Toast the rolls
Push the meat aside, spread mayo on the cut sides of the rolls and toast them cut-side down in the skillet until golden.
Step 6: Load and wrap
Pile the cheesy beef into the rolls and top with lettuce, tomato and ketchup. Wrap each sandwich tightly in foil for 1 to 2 minutes so everything steams together, then slice and serve.
Carly’s Expert Tips
- Use two metal spatulas. Chopping with two spatulas gives you the authentic fine, crumbly texture.
- Don’t move the beef at first. Letting it sit for a couple of minutes builds the crust and a ton of flavor.
- Wrap it in foil. This short steam softens the roll and melts everything together, just like the bodega.
- Add heat. A few pickled jalapeños or a splash of hot sauce is never a bad idea.
Make It Your Own
- Spicy: Add sliced jalapeños, hot sauce or a pinch of red pepper flakes to the beef.
- Different cheese: Cheddar, pepper jack or provolone all melt nicely.
- Peppers and onions: Chop in sautéed green peppers with the onion for a cheesesteak vibe.
- Make it a bowl: Skip the bread and serve the chopped beef over rice or a crunchy salad.
Make-Ahead and Meal Prep: Cook the seasoned beef and onion up to 2 days ahead and keep it in the fridge. Reheat it in a hot skillet, add the cheese and toast fresh rolls right before serving.
What to Serve With a Chopped Cheese
A chopped cheese is a full meal on its own, but it is great with potato chips, crispy fries, a pickle spear or a scoop of Cowboy Caviar on the side. For a soup and sandwich night, pair it with my Roasted Tomato Basil Soup.
Storing and Reheating
Chopped cheese sandwiches are best right after they are made. If you have leftovers, store the beef mixture and the rolls separately in the fridge for up to 3 days.
To reheat, warm the beef in a skillet over medium heat until hot, then assemble on a freshly toasted roll.
What People Ask About Chopped Cheese
What is a chopped cheese?
A chopped cheese is a New York bodega sandwich made with ground beef and onions chopped together on a griddle with American cheese, then served on a hero roll with lettuce, tomato and condiments.
What cheese is best for a chopped cheese sandwich?
White American cheese is the classic choice because it melts smoothly. Cheddar or pepper jack also work if that is what you have.
What seasoning goes in a chopped cheese?
Most bodega-style chopped cheese recipes use adobo and sazón, plus black pepper. Together they give the beef its savory, slightly smoky flavor.
Can I make this without a cast-iron skillet?
Yes. Any heavy-bottomed skillet works, but cast iron gets hotter and gives the beef a better crust.
