Ingredients

  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp prepared horseradish
  • 1/2 tbsp finely diced white onion
  • 1/2 tsp Worcestershire sauce
  • paprika
  • 1/2 tbsp pickle juice
  • 2 rye bread
  • 4 oz thinly sliced corned beef
  • 1/3 cup sauerkraut drained and squeezed dry
  • 4 oz shredded Swiss cheese
  • 1 tbsp softened butter

Method

Prepare the Russian Dressing
  1. Whisk together the mayonnaise, ketchup, horseradish, onion, Worcestershire sauce, paprika, and pickle juice until smooth. Set aside.
Prepare the Sandwich
  1. Take the sauerkraut and squeeze out as much liquid as possible so your sandwich stays crisp.
  2. Spread a thin layer of mayonnaise on one side of each slice of rye bread. Place the bread mayo-side down in a skillet over medium heat and top each slice with Swiss cheese. Close the sandwich and cook for 3-4 minutes, until the bread is golden and the cheese is melted.
  3. While the sandwich cooks, warm the corned beef and sauerkraut in a separate pan.
  4. Open the sandwich and spread the homemade Russian dressing over the melted cheese on both slices.
  5. Layer on the warm corned beef, top with the sauerkraut, close the sandwich, slice, and enjoy!

Notes

  • For extra crispiness, ensure the sauerkraut is well-drained and squeezed dry.
