Ingredients

  • 1 cup fresh blackberries
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • salt
  • 4 sourdough
  • 2 tbsp softened butter
  • 6 oz brie sliced
  • 6 white American cheese
  • 4 prosciutto thin slices
  • 6 leaves fresh basil torn
  • 1 tsp honey or hot honey

Method

Make the blackberry compote
  1. Add blackberries, honey, lemon juice, lemon zest, and salt to a small saucepan over medium-low heat.
  2. Cook for 5 to 7 minutes, stirring occasionally and gently mashing the berries, until thick and jammy.
  3. Remove from the heat and let it cool while you prepare the grilled cheese.
Assemble and cook the grilled cheese
  1. Butter one side of each slice of sourdough.
  2. Place two slices butter-side down in a skillet.
  3. Layer with brie, American cheese, and prosciutto.
  4. Top with the remaining bread, butter-side up.
  5. Cook over medium-low heat for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheeses are melted.
  6. Open up the sandwich and spread a generous spoonful of blackberry compote, then add the basil leaves.
  7. Coat one side of the bread in honey and flip to caramelize, cooking for another 1 to 2 minutes.

Notes

  • For a spicier kick, use hot honey instead of regular honey.
  • Make sure to cook the grilled cheese on medium-low heat to avoid burning the bread before the cheese melts.
  • You can prepare the blackberry compote ahead of time and store it in the fridge for up to a week.
