Ingredients

  • 1 baguette lightly toasted
  • burrata cheese
  • 4 slices prosciutto
  • 1 handful arugula
  • store-bought pesto
  • fresh basil
  • 1 cup cherry tomatoes
  • 1 head garlic
  • 2 tbsp olive oil
  • chopped parsley
  • salt
  • pepper
  • garlic powder
  • onion powder
  • red pepper flakes

Method

Make the Cherry Tomato Confit
  1. Preheat the oven to 350°F.
  2. In an oven-safe dish, combine cherry tomatoes, garlic, parsley, olive oil, salt, pepper, garlic powder, and onion powder.
  3. Bake for 25-30 minutes, until the tomatoes are soft and jammy.
Assemble the Sandwich
  1. Spread pesto on the bottom half of the toasted baguette.
  2. Coat your arugula in the seasoned olive oil from the Tomato Confit.
  3. Layer on arugula, burrata, tomatoes, prosciutto, and top it all off with fresh basil and a balsamic glaze drizzle.

Notes

  • Use high-quality burrata and prosciutto for the best flavor.
  • Toast the baguette lightly to add a nice crunch without making it too hard.
  • Adjust the seasoning in the Cherry Tomato Confit to suit your taste.
  • If you prefer more heat, add extra red pepper flakes to the confit.
  • Drizzle balsamic glaze sparingly to avoid overpowering the other flavors.
