Ingredients

  • 3 sweet onions thinly sliced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp Worcestershire sauce
  • 1 tsp balsamic vinegar
  • 2 clove garlic minced
  • sprigs fresh thyme (optional)
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1/3 cup mayo
  • 1 cup sharp white cheddar shredded
  • 1 cup mozzarella shredded
  • 1/4 cup parmesan
  • black pepper
  • 1 cup panko
  • 3 tbsp butter melted
  • 1/4 cup parmesan

Method

Caramelize the onions
  1. Melt butter and olive oil together in a wide pan over medium-low heat. Add onions and salt and cook for 35–45 minutes, stirring frequently, until they’re deep golden and jammy.
  2. Add garlic, balsamic vinegar, Worcestershire sauce, and thyme in the last 2–3 minutes of cooking.
Prepare the dip base
  1. Stir cream cheese, sour cream, and mayo together until smooth.
  2. Fold in shredded sharp white cheddar, mozzarella, parmesan, and a good amount of black pepper.
  3. Add the caramelized onions and fold everything together.
Assemble and bake
  1. Spread the mixture into a baking dish or cast iron skillet.
  2. Mix panko, melted butter, and parmesan together. Sprinkle evenly over the top, pressing in lightly.
  3. Bake at 400°F for 20–25 minutes until bubbling and golden. Broil for 1–2 minutes at the end for extra crunch and color, keeping a close eye.
  4. Let the dip sit for 5 minutes before serving so it thickens slightly.

Notes

  • Use fresh thyme for a more aromatic flavor, but dried thyme works as a substitute.
  • Broil the topping briefly for extra crunch, but watch closely to avoid burning.
  • Serve with sturdy bread or crackers to scoop up the creamy dip.
