  • 2 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta
  • 2 cup store-bought tzatziki
  • 2 mini cucumbers sliced
  • 1 cup cherry tomatoes sliced
  • 1 green bell pepper sliced
  • 1/2 cup red onion finely diced
  • 1/4 cup fresh dill and fresh parsley chopped
  • 1 tbsp dried oregano
  • 1/3 cup crumbled feta
  • 3 tbsp good quality olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cup cooked rice
  • 2 tbsp good quality olive oil
  • 1/2 cup fresh parsley chopped
  • 1 tsp salt

Method

For the meatballs
  1. Mix ground turkey, breadcrumbs, crumbled feta, lemon zest, parsley, egg, garlic, salt, and black pepper until just combined. Roll into 12-14 tablespoon-sized meatballs.
  2. Bake at 400 degrees for 18-20 minutes until golden and cooked through.
For the cucumber feta tomato salad
  1. Toss sliced cucumbers, cherry tomatoes, green bell pepper, red onion, dill, parsley, oregano, and crumbled feta in a bowl.
  2. Whisk together olive oil, red wine vinegar, lemon juice, honey, salt, and black pepper, then pour over the salad.
For the Greek rice
  1. Fluff cooked rice with a fork and stir in olive oil, salt, and chopped parsley.
To serve
  1. Spoon tzatziki onto each plate, top with warm meatballs and a sprinkle of crumbled feta. Serve with the salad and rice on the side.

Notes

  • Using a cookie scooper makes shaping the meatballs easier.
  • For a more intense flavor, let the salad marinate for a few minutes before serving.
