Ingredients

  • 1 lb chicken breast
  • flour tortillas
  • shredded cheese (Mexican blend mozzarella, or pepper jack)
  • fresh jalapeños (diced)
  • white onion (thinly sliced)
  • chives (for garnish)
  • hot honey (for drizzling)
  • 3 tbsp hot honey
  • 4 tbsp Frank’s RedHot
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • salt & pepper to taste

Method

Prepare the Chicken Marinade
  1. Mix hot honey, Frank’s RedHot, olive oil, garlic powder, paprika, onion powder, salt, and pepper in a bowl or ziplock bag.
  2. Add sliced or pounded chicken breast to the marinade and let it sit for at least 30 minutes or overnight.
Cook the Chicken and Onions
  1. Heat your pan or griddle to medium-high and oil lightly.
  2. Cook the marinated chicken for 4–5 minutes per side, or until golden and cooked through (165°F internal temperature).
  3. Add the sliced onions to the pan and cook until soft and caramelized.
Assemble and Cook the Quesadillas
  1. Place tortillas on the pan and layer with shredded cheese, cooked hot honey chicken, diced jalapeños, and caramelized onions.
  2. Fold the tortilla or top with a second tortilla. Press and cook until crispy and golden on both sides.
  3. Slice the quesadilla, drizzle with extra hot honey, and garnish with chives.

Notes

  • Marinate the chicken overnight for maximum flavor.
  • Use a mix of cheeses for a more complex flavor profile.
  • Adjust the amount of jalapeños based on your spice tolerance.
  • Make sure the pan is hot enough to get a crispy tortilla.
  • Serve with sour cream or guacamole for added creaminess.
