  • 1 bundle vermicelli noodles
  • 2 cup carrots (julienned)
  • 1 cup cucumber (matchsticks)
  • 1 cup red cabbage (shredded)
  • 4 sprigs green onion (sliced)
  • 1 bundle cilantro
  • 12 sheet rice paper wrappers
  • 2 tbsp hot honey
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp hot honey
  • 3 clove garlic (minced)
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp chili flakes (optional)
  • 1 tsp grated ginger (optional)
  • 1/2 tsp rice vinegar or squeeze of lime
  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp hot honey
  • 1 tsp rice vinegar or lime juice
  • 1 clove garlic (grated)
  • 1 tsp sesame oil
  • 2 tbsp warm water (to thin)

Method

Prepare the Chicken
  1. Whisk together the marinade ingredients and pour over the chicken thighs. Let it sit for at least 20 minutes.
  2. Air fry the chicken at 375°F for 14-16 minutes, flipping halfway through. Ensure the chicken reaches an internal temperature of 165°F.
Prepare the Vermicelli Noodles
  1. Cook the vermicelli noodles according to the package instructions. Drain, rinse with cold water, and set aside.
Prepare the Vegetables and Herbs
  1. Thinly slice the carrots, cucumber, red cabbage, green onion, and cilantro to make them easy to roll.
Assemble the Summer Rolls
  1. Fill a shallow dish with warm water. Dip one rice paper sheet until just soft, about 10–15 seconds.
  2. Layer noodles, veggies, and herbs just off the center of the rice paper, then add chicken. Roll once, fold in the sides, then roll it up like a burrito.
Make the Peanut Dipping Sauce
  1. Whisk together all the sauce ingredients until smooth and creamy. Thin with warm water until it reaches the desired consistency.

Notes

  • Ensure the rice paper is not soaked for too long; it should be pliable but not overly soft.
  • Use fresh herbs like cilantro for a burst of flavor in every bite.
  • Adjust the spice level in the marinade and dipping sauce to suit your preference.
  • Serve the rolls immediately for the best texture and flavor.
