Ingredients

  • 8 oz sushi-grade salmon thinly sliced
  • 1 jalapeño thinly sliced
  • 1/4 small red onion thinly sliced
  • 2 radishes thinly sliced
  • 1/4 English cucumber thinly sliced
  • fresh cilantro leaves
  • lime zest
  • flaky sea salt
  • 1 cup fresh cilantro packed
  • 1/2 cup neutral oil
  • 1/2 clove garlic
  • 1 tbsp fresh lime juice
  • 1 tbsp honey
  • 1/2 tsp lime zest
  • salt
  • 2 tbsp cilantro lime oil
  • 1 1/2 tbsp fresh lime juice
  • 1 tsp honey or agave
  • 1/2 tsp rice vinegar
  • salt

Method

  1. Blend cilantro, oil, garlic, lime juice, honey, lime zest, and salt until smooth. Strain through a fine-mesh sieve and set aside.
  1. Whisk cilantro lime oil, lime juice, honey or agave, rice vinegar, and salt until emulsified. Adjust with more honey or salt if needed.
  1. Gently roll the thinly sliced salmon to give each piece some height, then arrange on a serving plate.
  1. Layer the cucumber, radish, red onion, and cilantro over the salmon. Tuck thinly sliced jalapeño around each piece of salmon.
  1. Drizzle salmon and veggies lightly with the cilantro lime oil, then finish with the cilantro lime dressing right before serving.
  1. Finish with lime zest and flaky sea salt. Serve immediately.

Notes

  • For a milder flavor, remove the seeds from the jalapeño before slicing.
  • Use a sharp knife to ensure clean, thin slices of salmon and vegetables.
