Ingredients

  • 8 oz brie
  • 1 pt fresh raspberries
  • 1 tbsp sugar
  • 1/4 tsp kosher salt
  • 1 tsp fresh thyme leaves
  • 2 sprigs rosemary
  • 1/2 tsp orange zest
  • 3 tbsp raspberry preserves

Method

  1. Toss raspberries with sugar and salt in a baking dish, and top with orange zest.
  1. Place the brie in the dish and lightly score the top, ensuring not to cut too deep, just enough to cut through the rind.
  1. Spoon raspberry preserves over the center of the brie wheel.
  1. Bake at 375°F for 18–22 minutes until the brie is melty.
  1. Let the brie rest for 3–5 minutes before slicing. Top with thyme leaves and nestle rosemary sprigs around the edge.

Notes

  • Serve with crackers or a sliced baguette for the perfect pairing.
  • Ensure the brie is scored lightly to avoid cutting too deep into the cheese.
  • Use fresh herbs for a more aromatic and flavorful finish.
