Ingredients

  • 2 cups cherry tomatoes
  • 4 oz goat cheese (Garlic & Herb)
  • 3 clove garlic minced
  • 1/2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1 sprig fresh basil
  • 1 oz fresh Parmesan
  • 1 baguette sliced
  • 2 tbsp butter
  • 1 clove garlic minced (for garlic butter)
  • 1/2 tsp salt (for garlic butter)
  • 1/2 tsp Italian seasoning (for garlic butter)
  • 1 tbsp Parmesan (for garlic butter)

Method

  1. Preheat oven to 375°F.
  1. Add cherry tomatoes, minced garlic, olive oil, salt, pepper, Italian seasoning, and red pepper flakes to a baking dish.
  1. Roast for 15-20 minutes until the tomatoes begin to burst. Remove from the oven and nestle the goat cheese into the center of the dish.
  1. Return to the oven for 7-10 minutes, until the goat cheese is softened.
  1. While the dip bakes, slice the baguette and prepare the garlic butter by mixing melted butter, minced garlic, salt, Italian seasoning, and Parmesan.
  1. Spread the garlic butter on the baguette slices and toast them in the oven for 5-7 minutes until golden.
  1. Finish the dip with fresh basil and a sprinkle of fresh Parmesan before serving.

Notes

  • For an extra burst of flavor, use flavored goat cheese like Garlic & Herb.
  • If you prefer a spicier dip, increase the amount of red pepper flakes.
  • Serve the dip warm for the best texture and flavor.
  • You can prepare the garlic butter ahead of time to save time during assembly.
