Ingredients

  • 6 oz lo mein or rice noodles
  • 1/4 cup creamy peanut butter
  • 1 1/2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp chili crisp
  • 1/2 tbsp fresh lime juice
  • 2 clove garlic minced
  • 1/2 tbsp fresh grated ginger
  • 2 scallions sliced
  • 2 tbsp neutral oil
  • 1/2 tbsp toasted sesame oil
  • 3 tbsp reserved pasta water
  • chopped cilantro
  • chopped roasted peanuts
  • lime wedges

Method

  1. Cook the noodles according to package directions. Reserve 3 tbsp of pasta water before draining.
  1. Combine the peanut butter, sesame oil, soy sauce, rice vinegar, honey, chili crisp, lime juice, garlic, ginger, and the white parts of the scallions in a heatproof bowl or pan.
  1. Heat the neutral oil until it’s shimmering, but not yet boiling, then carefully pour it over the mixture. Let it sizzle for 10 seconds.
  1. Whisk until smooth. Stir in the pasta water a little at a time until the sauce is silky.
  1. Toss with the cooked noodles until evenly coated. Add in your protein.
  1. Top with the scallion greens, cilantro, chopped peanuts, and a squeeze of fresh lime.

Notes

  • Customize with chicken, shrimp, steak, or tofu for added protein.
