Ingredients

  • 1 lb chicken breast or thighs cubed
  • 1 orange bell pepper chopped
  • 1 zucchini sliced
  • 1 yellow squash sliced
  • 1 red onion chopped
  • 1 handful mushrooms
  • 1 wooden or metal skewers
  • 1 lemon juiced
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 clove garlic minced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • salt to taste
  • pepper to taste
  • 2 tbsp olive oil

Method

  1. Whisk together the marinade ingredients in a bowl.
  1. Add the cubed chicken to the marinade and toss to coat. Let it marinate for at least 30 minutes or overnight for better flavor.
  1. Chop all the vegetables into similar-sized pieces to ensure even cooking.
  1. Thread the marinated chicken and vegetables alternately onto the skewers.
  1. Grill or pan-sear the skewers on medium-high heat, turning occasionally, until the chicken is golden and fully cooked, about 10–12 minutes.

Notes

  • Soak wooden skewers in water for 30 minutes before using to prevent them from burning on the grill.
  • For extra smoky flavor, grill the skewers over charcoal.
  • If you don’t have a grill, a grill pan or regular skillet works just as well.
  • Cut the vegetables into uniform sizes to ensure even cooking.
  • Double the marinade recipe if you want extra sauce for drizzling over the skewers.
